Spicy Cranberry Relishes
Relishes
Ingredients
2 bags fresh cranberries (16 oz. each), wash and drain
1 orange, zest then squeeze out the juice
2 tbs minced ginger
1 cup sugar
2 jalapeno pepper, stem removed and finely chopped
1 ounce rum
Instructions
Finely chop the cranberries in food processor and spoon into a mixing bowl. Add ginger, jalapeno and sugar into the same bowl
Zest the orange into the bowl. Then cut the orange in half and
squeeze the juice and add into the cranberry mixture.
Strain the cranberry juice, save for other use, such as for cocktail
Add rum and mix well
Keep refrigerated for two days, before using.
Will keep refrigerated about 3 months
